Thanksgiving



So and me and bf decided to volunteer to cook thanksgiving for his family for this year. We decided to make from scratch: Garlic Bread for appy. BBQ free range turkey with beer up his butt, homemade gravy, garlic mashed potatoes, stuffing, stir fried green beans with minced chicken, homemade perogies with sour cream, baked yam fries with garlic aioli and a homemade apple pie. We started of prepping on Saturday morning. We went to buy groceries and then headed home to prep the dough for the pie and the perogies, garlic bread. I brined the turkey with rosemary, thyme, oranges, lemon, peppercorns and salt.
Sunday night was our thanksgiving dinner. We woke up at 10am and we started cooking till 7pm. It was a very long day. Overall everything turned out well except the garlic bread which I believe was over worked in the dough department so that didn’t work out so well but other than that everything was a success! Overall a long tired day but a delicious meal all worth it!
On Monday it was my family’s turn to get together for Thanksgiving. Thankfully my brother prepped most of the work from turkey to stuffing to gravy. He did a wonderful job! My sisters made the mashed potatoes and the vegetables while I had made an apple pie the previous day. Overall a delicious meal that left us with filled tummies and food coma. Monday was a well-rested day and a well fed day!
This year I’m super grateful for my family, my mom especially for her hard work and her dedication in keeping up with all of us. For dealing with our wants and needs. Thankful for my siblings and all we had been through together. I love them each individually. Bonnie for being like a mom, Bernice for being a kid at heart at all times, Clinton for being the dad. For being supportive and over taking some responsibilities in the home. Thankful for my friends for being there as always for their support in all I do. Thankful for my bf for always being there for me when I am in need. For always loving me for who I am. It was truly a wonderful thanksgiving holiday full of good food and wonderful company. Even though some people might thank that holidays like this is overrated. I am glad we have these holidays to do special things for our families and putting our lives on hold to spend time with family.

Mommy's Birthday



On September 27 me and bf decided to cook dinner for my mom. I had the meal all planned out. We would start off with appetizers which consisted of a green papaya salad with cherry tomatoes, roasted peanuts, green beans, fish sauce, palm sugar. Then we had sake steamed clams in butter and garlic broth. For entrees, I had prepared a banana leaf steam tilapia with shrimp paste and lemongrass with Hainanese chicken rice.  I also prepared a shrimp and long beans stir fry. And to end it off we had the mee goreng which consisted of fresh yellow Chinese noodles with shrimp, roasted peanuts, ketchup, bean sprouts, chicken, and cabbage. For dessert we had fresh cut pineapple with vanilla frozen yogurt with cheesecake. My mom wishes everyday was her birthday!

Golden Ears



On Saturday October 3, 2015 me and bf headed up to Golden Ears to hike up the Golden Ears trail. We woke up at 10am, showered, packed and got ready to go. We picked up breakfast at Tim Hortons as well as lunch on the way up. We got to Golden Ears about noon. We started the hike it was ok at the beginning until the mud trail came and then the rock trail. Overall we hiked up past Alder Flats towards Golden Ears and made it to the stairs (which was the beginning of the Golden Ears) we had lunch and we partook of the beautiful scenery around us: the trees, the mountains and the fresh air. We decided that since it was about 3pm and there was another 5 hours to go we wouldn’t be able to make it down on time before the sun settled. So we just headed down. We got down by 6:45pm. Overall a fun, adventurous hike. And I definitely will be going back again. Probably camp at Alder Flats and head to Golden Ears the next day for another 5 hours up and camp up there for another night and head back down.
Afterwards we had to attend an engagement get together at Opus Hotel at the La Pentola lounge. Congrats to Mark and Denise!
